Los Ayala Fund-Raising Updates

     "The Most Delicious Fundraiser in Town" raised
$22,840.35 (net) for the schools in Los Ayala!









     Thank you to the anonymous and most generous person who once again donated an air conditioner for one of the school classrooms; all the Mom's in Los Ayala who worked hard baking, Casa Cooking for the delicious "Tres Leche Cake", everyone who baked or bought a dessert to donate to the event; and all the volunteers who ensured the events success!

     Finally, an extra special Congratulations to "Linda and Orlando" for making this event a success!




"Tapatios "
This is a nickname for the local people in Guadalajara and the surrounding area in Jalisco.
Tapatios are known for being especially laid back and fun-loving.

Poblano Chilis

     Debra says that this is a wonderful salad combination that is found throughout Mexico, however, she has yet to find it served in Jaltemba Bay.

     A great salad to serve with spicy foods or grilled chicken or shrimp. From Debra's favorite cookbook. "1000 Mexican Recipes," by Marge Poore.

Ensalada de Aguacate y Melon
(Avocado and Melon Salad)

1 ripe cantaloupe, peeled and cut into bit-size pieces
1 medium cumber, peeled, halved lenghtwise, seeded, and sliced
1 large jalapeno chili, seeded, veins removed, and finely chopped
Juice of 2 limes
1/2 teaspoon salt
2 large avocado, peeled and cut into bite-size pieces
2 tablespoons chopped cilantro

     In a large bowl, toss together the melon, cumber, jalapeno, lime juice, and salt. Gently stir in the avocado and cilantro. Refrigerate for at least an hour. Serve Cold.

Tip: When shopping locally for Avocados if you are unsure of the ripeness of the Avocado don't be afraid to ask for help..... They "know" their produce here!

This & That and Then Some...
A few words from the Editor - Christina Stobbs

     Mexico is full of surprises. Like today, when two construction workers asked me for a mop and some bleach so they could clean up the resultant mess from parging a wall in our house which is susceptible to the salt in the air. I was quite delighted when they swept up the mess, and flabbergasted when I heard the request for the mop... Indeed as I write, they are washing my floors! Delightful!

     I am also surprised to find that my social calender is far busier while living  in small town, rural Mexico, then it ever was when I lived in the big cosmopolitan city of Vancouver, B.C..  February was jam packed with community events and fundraisers; each of them special, offering participants a great time and uniquely rewarding experience.

     It was great to see the Jaltemba Bay Fashion Show at Vista Guayabitos - truly the perfect venue for a wonderful event supporting a myriad of great causes! It is also terrific to see more participation in Los Ayala's community events. Linda and Orlando, of "Dessert Buffet & Dance," fame  raised $22,840.35 pesos for the schools of Los Ayala!

     Romy Mora's team raised $39,550 pesos through the Chacala Cruise - which translates to $158,200.00 pesos  through the 3 for 1 program!  They hope to repeat this success with Los Ayala's Season Finale - "Its a Party" which takes place on Thursday, March 10th and features "Juan-Ted and the AMAZING Rhythm Roosters," who say they just may be The Best Lil’ Ol’ R&R / Blues Band In Mexico!

    What to do now that all the seasons events are coming to a close? Take some time to explore this beautiful area... The small town of La Colonia intrigues me for its abundant, wild beauty, authenticity and Indian Jones feel.  I see a few pioneers are starting to build homes here, and can see the strong appeal of living here. The little paradise called La Colonia is just five minutes away from all the conveniences of La Penita de Jaltemba. The beach is drop-dead gorgeous, deserted and miles long.   It takes about three hours to walk its' full length at a good pace. Accessing this beach is easy if you drive to the beach entrance. However, if you are feeling adventuresome and feeling agile it is far more fun to start your journey by clambering over the rocks at the far north end of La Penita beach.

Buy Local Campaign

     The Buy Local Campaign was started in November by JEDI (the Jaltemba Economic Development Initiative) a committee of Los Amigos. The campaign is designed to encourage people to do their shopping locally rather than buying in Puerto Vallarta or other larger towns. This way the money stays here, boosts the economy, and helps our Mexican neighbors.

     You may have seen the Buy Local posters in stores in the Jaltemba region, or perhaps you've bought one of the fabulous, reusable Buy Local shopping bags (these can be purchased at participating stores; make sure you ask for them if you don't see them).

     For the past two weeks, Suyin Ávila (Buy Local representative) has been visiting local stores and producing a sales flyer which is distributed at the Thursday tianguis market. The flyers, in both Spanish and English, promote special weekly discounted items that local stores are offering. Every week there are sales items included from all four communities: Los Ayala, Guayabitos, La Peñita and La Colonia.

Flyers will also be featured on the Los Amigos Website starting this week.  Special prices always run from Thursday to the following Wednesday.

    The Penita Players present an evening of Comedy Theatre for three performances...

How the monies raised in 2010 were spent

     Wow, it sure is wonderful to be able to make a difference through community fundraisers! The Dessert Buffet & Dance is especially heartwarming since it improves the learning environment for children and teachers in Los Ayala. The monies raised from last years Dessert Buffet & Dance were spent to...


  • An old brick wall in the Teachers room was parged (covered with cement)
  • The leaky roof in the teachers room was fixed, and a hole in the stairs which allowed children to access the roof, and clearly was a safety hazard was filled
  •  New desks were purchased for the children
  •  A drain was Install in the center courtyard of the elementary school which will prevent flooding during the rainy season
  •  The schools were freshly painted inside and out!
  •  Air conditioning mini-split was installed in several class rooms
  •  A sidewalk was built outside the elementary school
  •  Faulty plumbing was replaced in bathrooms
 Still to do with last years funds... Provide a shaded breakfast area

Chacala Cruise
Event Summary

     We raised $39,550 pesos through the Chacala Cruise, which translates to $158,200.00 pesos for to improve the roads in Los Ayala through the 3 for 1 program!

    It was a fun day on the boat, and although the cruise took longer then expected, and the wait for lunch was too long, the meal was superb and the portions were generous.  We saw whales and even some dolphins on the cruise and the scenery was spectacular. The crew of the Los Ayala Gran Fiesta was awesome, and the tour of the Majahua resort was very much enjoyed by participants.

     Thank you. It was a pleasure and we hope to run this event again next year - and we plan to make it even better!

      If you are stung by a stingray soaking the area in hottest water possible alleviates the pain. If you are stung by a jelly fish applying vinegar alleviates the pain.

Recycling in Los Ayala - News
An Expansion of the Los Amigos Recycling Program

     The Recycling Committee of Los Amigos is pleased to announce that we have now started to collect cardboard for recycling. The driver (Tavo) picks up at various business, bungalows and hotels and will now collect cardboard if left beside the existing baskets on the streets.

     Collection is done on Mondays for Los Ayala. Please put out the cardboard only on delivery days and break down boxes if at all possible. Thank you.



Valentines Day in Los Ayala

     Restaurant Charly had over 80 persons in attendance for Valentines Dinner. Much to the delight of everyone in Los Ayala "Restaurant Charly" is thriving under the new ownership of Christina Alvara, especially since she intends to stay open for business throughout the year!

     We enjoyed a quiet romantic dinner at Restaurant Pikikos on Los Ayala beach. Pikikos is a favourite beach front Palapa restaurant amongst locals and a great place to enjoy a day at the beach under the shade of a palapa with a cool one!
